South Beach Muffins (~from http://sisterscafe.blogspot.com)


South Beach Muffins

Bowl One:
2 c. whole grain oats
2 ½ c. lowfat buttermilk
1 c. unsweetened applesauce
1 c. or one 6-oz bag of dried cranberries

Bowl Two:
2 ½ c. whole wheat flour
3 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1 1/3 c. chopped walnuts
1 scant tsp. salt

Bowl Three:
2 eggs, beaten
2 c. sugar (or splenda, although I’ve never tried it)
4 tsp vanilla
2/3 c. canola oil

~Preheat oven to 375°. Add bowl one to bowl three and mix well. Add bowl two and mix just enough to moisten. DO NOT OVERMIX. Fill muffin tins 2/3 full and bake for 20 or so minutes, or until a toothpick inserted comes out clean or with defined moist crumbs on it. Makes 2 dozen.

Oreo Cookies

1 Pkg. German chocolate cake mix
1 Pkg. devil food cake mix
1 ½ C. shortening
4 eggs
2 tsp. vanilla

* Bake cookies at 350 degrees for 10 minutes.

Frosting:

2 Pkg. dream cheese
2 cubes butter
7 C. powdered sugar
touch of vanilla

Boneless Pork Ribs - Family Fav

Pork Spare Ribs
(From Sherry Hyde, Eric's Mom)

2 Tbsp. Brown sugar
½ C. Ketchup
½ tsp. Mustard
4 tsp. Lemon juice
½ C. Water
Dash Worcestershire sauce
1/3 C. onions sauté’ in butter
**I always double this

* Brown in oil boneless pork spare ribs. Add ribs to the above mixture in crock pot. Cook on low for many hours--apx. 6-8. Serve over rice with the sauce. Hint better the next day

So I came out ahead, yipee. I paid a total $ 3.21 (split up between 2 transactions) I received a $5 register rewards so profit of $2 because I used a $3 register rewards to purchase the items also. LOVE THE SAVINGS! Eric and I are stocked up on shavers, deoderant, and body wash for a year I really won't buy anymore unless it is an incredible deal <25 cents. What a great feeling now if I could get flour and sugar....

Meat Lover's slow cooker spagetti sauce-yum yum (Submitted by Ashley Allrecipes.com)


Meat Lovers Slow Cooker Spagetti Sauce
Ingredients:
2 tablespoons olive oil
2 small onions, chopped
(I also added 1 green pepper-chopped)
1/4 pound bulk Italian sausage
1 pound ground beef
1 teaspoon dried Italian herb seasoning
1 teaspoon garlic powder
1/2 teaspoon dried marjoram
1 (29 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 (14.5 ounce) can Italian-style diced
tomatoes
1 (14.5 ounce) can Italian-style stewed
tomatoes
1/4 teaspoon dried thyme leaves
1/4 teaspoon dried basil
1/2 teaspoon dried oregano
2 teaspoons garlic powder
1 tablespoon white sugar
Directions:

1. Heat olive oil in a skillet over medium heat; cook and stir onions and Italian sausage until the sausage is browned, about 10 minutes. Transfer the sausage and onions to a slow cooker. In the same skillet, cook and stir the ground beef, Italian seasoning, 1 teaspoon of garlic powder, and marjoram, breaking the meat up as it cooks, until the meat is browned, about 10 minutes. Transfer the ground beef into the slow cooker.


2. Stir in the tomato sauce, tomato paste, diced tomatoes, stewed tomatoes, thyme, basil, oregano, and 2 teaspoons of garlic powder. Set the cooker on Low, and cook the sauce for 8 hours. About 15 minutes before serving, stir in the sugar. Serve hot

Quick Dinner-Fiest Ravioli


Fiesta Ravioli (By Melanie at Sisterscafe.blogspot.com)

1 package (25oz) frozen beef ravioli
1 can (10 oz) enchilada sauce
1 jar (8oz) salsa
2 cups shredded Cheddar-Monterey Jack cheese
1 can (2oz) sliced black olives drained (optional)
sour cream and lettuce for garnish

Cook ravioli according to package directions. Meanwhile, in a large skillet combine enchilada sauce and salsa. Cook and stir over medium heat until heated through. Drain ravioli, add to sauce and gently stir to coat. Top with cheese (and olives, if desired). Cover and cook over low heat for 3-4 minutes or until cheese is melted. Bring to the table and enjoy with lettuce and sour cream. Apporx. 6 servings

My sisters sister in law posted on her blog that TARGET was offering free glasses to kids 5-12. This is for real. First thing this morning we woke up, called the Orem Target and ran Neicell over. Winco BABY

Look closely at all the stuff I got for just $32.97. I can't believe the deals, I had a couple coupons but they only saved me $3 or so. Winco sent out an add with coupons in it. I used the coupons on my first transaction but when I went back with my sister I didn't need it they were honoring the coupon prices for everyone. Their sales go till the 9th so don't miss out. PS I did this same transaction twice I went back over with my sister. Can't beat these prices!!!

Lasgna (sisterscafe.blogspot.com)

I doubled this recipe and placed in 4 8X8 pans and froze 3

Half of a 1-lb package lasagna noodles
1 to 1 ½ lbs ground beef
1 c. chopped onion
1 28-oz can diced tomatoes (undrained)
2 6-oz cans tomato paste
2 tsp sugar
2 ½ tsp dried basil
¼ tsp pepper
1 15-oz container ricotta cheese
1 egg, beaten
1 Tb parsley flakes
4 c. shredded mozzarella cheese
¾ c. grated parmesan cheese


**Prepare lasagna noodles, drain. Cook ground beef and onion. Stir in tomatoes, tomato paste, sugar, 2 teaspoons of the basil and pepper. Bring to boil then reduce heat and simmer uncovered for 20 minutes. In a small bowl blend ricotta, egg, parsley, and ½ teaspoon salt. In a second bowl combine the mozzarella and the parmesan cheese.
Put a layer of noodles in a 9x13 pan, a layer of meat sauce, a layer of ricotta mixture and a layer of the mozz/parmesan cheese then repeat all the layers. Cover with foil. Bake at 375° for 30 minutes. Uncover, bake 20 minutes more. Let stand 10 minutes before cutting.

Ham and Noodle Casserole (Taste of Home submitted by Kelli F.)

Ingredients
6 cups water
4 cups uncooked egg noodles
1 onion, chopped
1/2 cup sour cream
1 (10.75 ounce) can condensed cream of chicken soup
2 cups diced cooked ham
2 cups shredded Swiss cheese
salt and pepper to taste
1/4 cup dry bread crumbs
Directions
Preheat an oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole.
Bring water to a full rolling boil in a pot.. Cook the egg noodles in the boiling water, stirring occasionally, for 3 minutes; remove from heat, cover, and let stand until the noodles are tender, about 10 minutes. Drain.
Stir the noodles, onion, sour cream, chicken soup, ham, and Swiss cheese together in a large bowl. Season with salt and pepper. Spoon into the prepared casserole. Sprinkle the top with bread crumbs.
Bake in the preheated oven until the casserole is bubbling and the bread crumbs have browned, about 40 minutes.

Ham Stew (Taste of Home submitted by Judy Hall)


Ingredients
4 medium red potatoes, peeled, cut into 3/4-inch cubes
4 medium carrots, sliced
3 cups cubed fully cooked ham
2 cups water
2 small onion, chopped
2 bay leaf
1 teaspoon salt
1/2 teaspoon dried savory
1/4 teaspoon pepper
1/4 cup and 2 tablespoons all-purpose flour
2 cups milk

Directions

In a saucepan, combine the first nine ingredients. Bring to a boil. Reduce heat; cover and simmer until vegetables are tender. In a small bowl, combine the flour and milk until smooth. Stir into stew. Bring to a boil; cook and stir for 2 minutes or until thickened. Discard bay leaf before serving.

Black bean tortilla casserole (Taste of Home submitted by Sue Briski)

2 lg onions
1-1/2 C chopped green peppers
1 can (14-1/2 oz.)diced tomatoes, drained
3/4 C picante sauce
2 garlic cloves (I didn't use I just dashed with garlic salt)
2 tsp. round cumin
2 cans (15 oz. each) black beans, rinsed and drained
8 corn torillas (6 inches)
2 C (8oz) shredded reduced-fat Mexican cheese blend

Toppings:
1-1/2 C shredded lettuce
1 C chopped fresh tomatoes
1/2 C sliced ripe olives

**In a large saucepan, combine the onions, peppers, tomatoes, picanted sauce, garlic and cumin. Bring to a boil, reduce heat and simmer uncovered for 10 minutes. Stir in beans. Spread a third of the mixture in a 13 X 9 dish coated with cooking spray. Layer with four torillas and 2/3 C cheese. Repeat layers; top with remaining beans. Cover and bake at 350 degrees for 30-35 mintues or until heated through. Sprinkle with remaining cheese and serve with toppings. Also yummy with avocado.
